Ingredients

  • 1 pound black beans
  • 2 bacon slices, chopped
  • 1 cup chopped onions
  • 3/4 cup chopped carrots
  • 3/4 cup chopped celery
  • 2 garlic cloves minced
  • 4 (14 oz) chicken broth
  • 1 (28 oz) crushed tomatoes
  • 1/3 cup minced cilantro
  • 2 tablespoons fresh lime juice
  • 1 tea salt
  • 1/2 tea black pepper
  • 3/4 cup sour cream

Preparation

Step 1

Cook bacon in dutch oven until crisp. Remove bacon from pan. Add onions, carrots, celery to drippings- saute for 10 minutes. Add garlic-2 minutes. Add beans, broth, bacon, and tomatoes. Bring to a boil. Cover and simmer for 1.5 hours. Process with blender until smooth. Stir in cilantro, lime juice, salt and pepper.
