REFRIGERATOR YEAST ROLLS

(This recipe was one that Mother found in the cookbook that accompanied the first microwave oven her children bought her--and which she thought she didn't need, by the way. For many years, Mother was responsible for bringing these rolls to any kind of family gathering.)

Ingredients

  • 1 pkg. dry yeast
  • 2 1/2 c. flour
  • 1 c. whole wheat flour
  • 1 1/4 c. milk
  • 1/4 c. sugar
  • 1/4 c. shortening
  • 1 tsp. salt
  • 1 egg

Preparation

Step 1

In large mixing bowl combine yeast and 2 cups flour. In 4-cup glass measuring cup combine milk, sugar, shortening and salt. Heat, uncovered, at HIGH in microwave to 1 1/2 -2 minutes, till warm and shortening begins to melt (115-120 F). Add to dry mixture in mixing bowl; add egg. Beat at low speed on electric mixer for 30 seconds, scraping bowl constantly. Beat 3 minutes at high speed. By hand stir in remaining flour to make a soft dough. Place in greased bowl; turn once to grease surface. Cover; chill at least 2 hours or up to 5 days.

Shape 1/2 of dough at a time for Pan or Crescent rolls. Let rise until doubled in size. Bake at 400º for 12-15 minutes. Makes 24 rolls.

Pan Rolls
Shape into 12 balls. Place 3 in center of greased 8-inch baking dish and surround with 9 remaining balls.

Crescent Rolls
Roll into 12-inch circle. Spread with melted butter. Cut into 12 wedges. Roll and place on greased cookie sheet.
