STRAWBERRY MUFFINS

Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. sugar, plus 6 tsp.
  • 2 eggs
  • 1 stick unsalted butter
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 1 1/2 – 2 c. chopped strawberries

Preparation

Step 1

Heat oven to 375°.
Combine flour, baking powder, salt and 1 c. of sugar in medium bowl. Toss in strawberries; set aside.
Beat eggs, butter (softened), milk and vanilla in small bowl. Add to dry ingredients; stir.
Spoon batter into muffin tins lined with paper liners. Sprinkle teaspoons of sugar over muffins.
Bake until toothpick inserted into center comes out clean, about 25 minutes.
