Chicken with Creamy Broccoli Rice

Ingredients

  • 1 tsp margarine
  • 4 skinless, boneless chicken breasts
  • 1 can Cream of Broccoli Soup
  • 1 1/4 cup milk
  • pepper to taste
  • 2 cups broccoli, cut into pieces
  • 1 cup carrots, thinly sliced
  • 1 1/4 cup uncooked minute rice

Step 1

In large skillet over medium-high heat, melt margarine. Add chicken and brown 3 minutes on each side. Remove chicken from skillet. In skillet, combine soup, milk and pepper. Stir in broccoli and carrots. Return chicken to skillet. Bring to a boil. Cover, reduce heat and simmer 20 minutes or until chicken is no longer pink and vegetables are tender, stirring constantly. Remove chicken and keep warm. Stir in rice. Cover; remove from heat. Let stand 5 minutes or until rice is tender. Fluff mixture with fork before serving.
