Pumpkin Bread II

Ingredients

  • 5 eggs
  • 1 1/2 1 ½ C. vegetable oil
  • 15 oz. pumpkin
  • 2 C. flour
  • 2 C. sugar
  • 2- 3 oz. each cook vanilla pudding mix
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 ½ tsp. salt

Preparation

Step 1

Preheat oven to 325. Beat eggs. Add oil and pumpkin, beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture. Pour batter into loaf pans and bake until tester comes out clean. Use 5 mini loaf pans-approximately 55 minutes. Or 2 loaf pans-approx. 80 minutes.
