Larabar - chocolate peanut butter

Ingredients

  • 1 pound (about 30) medjool dates
  • 1/2 cup unslated roasted peanuts
  • 1 TBSP unsweetened coco powder
  • 1 tsp peanut butter
  • 1 tsp coconut oil
  • 1/2 cup dark chocolate chips

Preparation

Step 1

In a food processor add peanuts and pulse until finely chopped. set peanuts aside.

Next, add dates, process until dates chop up and form into a ball

to that add cocoa, coconut oil, and peanut butter and process again until fully combined. scrape down sides if needed.

next add chocolate chips and reserved peanuts. mix well until fully combined.

dump mixture onto wax or parchment paper and form into a ball, cover ball with parchment/wax paper and roll out with rolling pin to 1/2 inch thickness.

cut into as many 3x1.5 rectangles. the excess can be re-rolled and re-cut.

wrap each bar in a strip of wax or parchment paper and store in an airtight container in fridge
