  • 1/4 cup sliced red onion soaked in cold water for 10 min then drained
  • 2 cups sliced Hearts of Palm
  • 1 cup sliced celeray
  • chopped parsley
  • Arugula
  • Dressing
  • 3 Tbsp lemon juice
  • olive oil

Preparation

Step 1

Toss onion, hearts of palm, celery and parsley with dressing.

Combine lemon juice and olive oil for dressing.

Serve over arugula.
