Ingredients
- Meringue:
- 1/2 Cup sugar
- 1/4 Cup flour
- 1 envelope unflavored gelatin
- 1/2 Teaspoon salt
- 1 3/4 Cups milk
- 3/4 Teaspoon vanilla
- 1/4 Teaspoon almond flavoring
- 3 egg whites
- 1/4 Teaspoon cream of tartar
- 1/2 Cup sugar
- 1/2 Cup whipped cream
- 1 Cup coconut
Preparation
Step 1
1. Bake pie shell according to directions.
2. Blend in sauce pan the sugar, flour, gelatin and salt. Gradually stirring the milk, cook over medium heat until mixture boils, stirring constantly. Boil 1 minute and place pan in cold water. Cool until mixture mounds slightly when dropped from spoon. Blend in vanilla and almond extract.
3. Meringue: Beat egg whites, cream of tartar and sugar. Fold into the pudding mixture. Fold in whipped cream and coconut. Pur into cooled pie shell. Sprinkle with coconut and chill. Makes 1 pie.
