Ingredients
- 1 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. quick-cooking oats, uncooked
- 1/2 c. sugar
- 1 large ripe banana, mashed
- 1 large egg
- 1/4 c. milk
- 1/4 c. vegetable oil
- 1 tsp. vanilla extract
- 1/2 c. butterscotch morsels (or chocolate)
Preparation
Step 1
Combine first 6 ingredients in a large bowl; make a well in center of mixture. Set aside. Combine banana, egg, milk, oil, and vanilla in a medium bowl, beating with a wire whisk until blended. Add to dry ingredients, stirring just until moistened. Fold in butterscotch morsels. Spoon batter into a greased muffin pan, filling three-fourths full. Bake at 400° for 13 to 15 minutes. Remove from pan immediately, and cool on a wire rack.
