Ingredients

  • 1 can shoepeg corn

  • 1 can small green peas

  • 1 can French-style green beans

  • 1 small jar pimentos

  • 1 C. chopped celery

  • 1 C. chopped onions

  • 1 C. green peppers

  • Drain all canned items, then mix:

  • 1/2 C. sugar

  • 1/2 C. olive oil

  • 1/2 C. Balsamici white vinegar

  • Heat the three above ingredients to dissolve sugar and add:

  • 1/4 t. salt

  • 1/4 t. pepper

Directions

Pour marinade over vegetables and refrigerate. Can be refrigerated for several days. Drain before serving.
