Ingredients
- 16 bamboo skewers soaked in water at least 30 minutes
- 2 garlic cloves, chopped
- 1c. pineapple juice
- 1 T. sugar
- 2tsp. finely chopped ginger
- 6 tsp. creamy peanut butter
- 2 tsp. red wine vinegar
- 2 lbs. boneless, skinless chicken breast, cubed
- 2 seedless cucumbers, peeled and sliced
- sliced tomatos, lime wedges, cilantro and crushed red pepper for garnish
Preparation
Step 1
1) in large bowl, mix together garlic, pineapple juice, sugar, ginger, peanut butter and vinegar. marinate chicken in 3/4 of mixture. thread cubes onto skewers
2) preheat grill on high. cook skewers for 8 minutes or cooked thru. turn occasionally
3) in md. bowl toss cucumbers with remaining marinade. serve chicken on dressed cucumbers and garnish with tomato, lime wedges, cilantro and crushed red pepper
