Arroz Con Leche

  • 4 cups water
  • 1 teaspoon salt
  • 1 cup uncooked rice
  • 1 1/2 teaspoon lard
  • 1/2 cup sugar
  • 4 cups milk

Preparation

Step 1

In a deep kettle heat to boiling the water and salt. Wash rice in a colander under running water.

Drain and add to the boiling water. Add lard and mix. Heat rapidly to boiling. Turn heat to low and cook for about 30 minutes, until liquid is absorbed.

Do not stir during this cooking period. Combine sugar and milk and add. Add lime rind and mix all together. Heat rapidly to boiling.

Turn heat to low and cook, uncovered, for about 30 minutes, turning rice over occasionally.
