Ingredients
- 1 whole frying chicken
- ***************************************
- 1 garlic clove
- 1 teaspoon oregano
- 3 peppercorns
- 2 1/4 teaspoon salt

- 1/4 cup butter
- 1 cup water
- 3 medium onions, peeled and sliced
- 1 teaspoon capers
- 10 green olives, pitted
- 3 bay leaves 10 prunes, pitted
- 2 tablespoons seeded raisins
- 8 medium potatoes, peeled and cut into pieces
- 1 1/2 cups muscatel wine
- 1/2 cup sugar
Preparation
Step 1
Wash and dry chicken.
Mash next 4 ingredients together and rub chicken well inside and out with mixture. Melt butter in a kettle. Add chicken and brown well on all sides.
Add all remaining ingredients except wine and sugar. Bring to boil, cover, and simmer for 15 minutes. Add wine and sugar, cover, and simmer for 15 minutes longer.
Uncover and cook 25 minutes longer or until chicken is tender and sauce thickens slightly.
