Ingredients
- 1 1/2 cups fresh blueberries
- 2 TB + 1/2 tsp sugar
- 1 tsp minced peeled fresh ginger
- 1 tsp grated lemon zest
- 1 tsp fresh lemon juice
- 1/4 tsp cinnamon
- 1/2 cup reduced fat baking mix
- 3 TB fat free milk

Preparation
Step 1
Preheat oven to 400 F. Spray 2 six ounce custard cups with nonstick spray.
Combine the blueberries, 2 TB of the sugar, the ginger, lemon zest, lemon juice, and cinnamon in a medium bowl. Divide the blueberry mixture between the custard cups.
Combine the baking mix and milk in a small bowl. Spoon batter over the blueberry mixture and sprinkle with the remaining 1/2 tsp of sugar. Place the custard cups on a small baking sheet.
Bake the cobblers until the topping is golden and the filling is bubbling, about 20 minutes. Serve warm or at room temperature.
