Easy Chocolate Eclairs
- 2 cups vanilla or chocolate ice cream
- 1 4-serving size package instant chocolate pudding mix
- 24 ladyfingers, split lengthwise
- 1/3 cup fudge or chocolate ice cream topping
For filling, in medium mixing bowl beat ice cream with electric mixer on low speed till softened. Add pudding mix. Beat 1 to 2 mins. or till combined.
Spread about 1 tablespoon filling over cut side of 24 ladyfinger halves; top with the remaining halves. Place filled lady fingers on rack over piece of waxed paper.
Heat fudge topping till melted; drizzle or spread on eclairs. Sprinkle with chopped nuts or top with fresh raspberries, if desired.
Cover and refrigerate up to 24 hours.
