Ingredients

  • 6 medium russet potatoes, peeled (optional), cubed
  • 16 oz. large curd cottage cheese
  • 8 oz. sour cream
  • 1 bunch scallions, diced
  • 1 clove garlic, minced
  • 1 cup grated cheddar cheese
  • Paprika

Preparation

Step 1

Boil potatoes until just tender. Drain water and add cottage cheese, sour cream, scallions, and garlic. Mix together and our into a two-qt. baking dish. Top with cheese and lots of paprika. Bake at 350º for 20 minutes.
