GREAT FRESH STRAWBERRY PIE

Ingredients

  • Crust:
  • 1 1/2 c. flour
  • 2 Tbs. sugar
  • 2 Tbs. cold milk
  • 1/2 tsp. salt
  • 1/2 c. Mazola corn oil (no other oil will work)
  • Filling:
  • 1 qt. fresh, ripe strawberries
  • 1 c. sugar
  • 2 well-rounded Tbs. cornstarch
  • 2 Tbs. white Karo syrup
  • 1 c. water
  • 2 Tbs. strawberry Jello

Preparation

Step 1

Clean and drain strawberries. In a saucepan, blend together the sugar and cornstarch. Slowly mix in the syrup and water, stirring well so that there are no lumps. Cook until the mixture is thick and clear.
Remove from the heat and add 2 Tbs. strawberry Jello dry mix. Stir until the Jello is dissolved. Immediately add the strawberries to the hot filling and stir in. When the filling has begun to cool, pour into the crust. Refrigerate.
