Chili and Spice Rubbed Pork Tenderloin with Honey Lime Glaze

Ingredients

  • CHILI AND SPICE RUB:
  • 4 ( 1 1/2 lb. pork tenderloins, trimmed
  • Chili and Spice Rub
  • 1/4 cup vegetable oil, divided
  • 1/2 cup honey
  • 1/4 cup fresh lime juice
  • Garnish: lime wedges
  • 2 tbsp. ground coriander
  • 2 tbsp. ground cumin
  • 2 tbsp. salt
  • 2 tbsp. dried thyme
  • 2 tbsp. garlic powder
  • 1 tbsp. chipotle chile powder
  • 1 tsp. ground red pepper

Preparation

Step 1

1. Preheat oven to 400. Line a rimmed baking sheet with aluminum foil; set aside

2. Coat tenderloins with desired amount of Chili and Spice Rub.

3. In a large skillet, heat 1 tbsp. oil over medium high heat. Cook 1 pork tenderloin for 2 minutes per side or until lightly browned. Remove tenderloin, and place on prepared pan. Repeat with remaining oil and pork tenderloins.

4. Bake for 20 minutes or until a meat thermometer inserted into the thickest part of tenderloin registers 155 or to desired degree of doneness. Combine honey and lime juice; drizzzle over pork. Garnish with lime wedges, if desired.

CHILE AND SPICE RUB;

1. in a small bowl, combine coriander, cumin, salt, thyme, garlic powder, chile powder, and red pepper. Store in an airtight container at room temperature for up to 6 weeks.
