Ingredients
- 2 large unpeeled baking apples, cored and quartered
- 1 large unpeeled orange, quartered
- 2/3 cup shortening
- 2 cups sugar
- 4 eggs
- 1 teaspoon lemon extract
- 4 cups all purpose flour
- 2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2/3 cup orange juice
- 1 cup chopped walnuts
Preparation
Step 1
In a blender or food processor, process apples and orange until finely chopped, set aside. in large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition, beat until light and fluffy. Beat in extract. Combine dry ingredients, add to creamed mixture alternately with orange juice. Stir in fruit mixture and nuts. Pour into three greased loaf pans. Bake at 350 degrees for 50-55 minutes or until a wooden pick inserted near the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely.
