CARROT CAKE

Ingredients
- 2 C sugar
- 1 1/2 C oil
- 4 eggs
- 2 t baking soda
- 2 t baking powder
- 2 C flour
- 2 t cinnamon
- 1 t salt
- 1 C chopped nuts
- 3 C grated carrots
- Icing: 1 box powdered sugar
- 1/2 stick butter
- 1 t vanilla
- 8 oz cream cheese
- (usually double)

Preparation
Step 1
Mix first two ingredients and add well beaten eggs. Add dry ingredients and stir well until smooth. Add nuts and carrots. Pour into 3 9" cake pans and cook 30 minutes at 325 degrees.
Icing: Mix well powdered sugar, butter, vanilla and cream cheese.
