Pork Medallions in Wild Mushroom Sauce

Ingredients

  • 2 pork tenderloins
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 8 oz Shiitake, cremini or button mushrooms, sliced
  • ¼ cup water
  • 1 tsp dried thyme
  • ¼ tsp each salt and pepper
  • 1 ½ cups whipping cream
  • 2 tsp red pepper jelly

Cut pork into ½” thick slices. In large frying pan, heat butter and oil over medium-high heat. Cook pork in batches for about 6 minutes or until browned and just a hint of pink remains inside. Transfer to plate and keep warm. Reduce heat to medium. Add mushrooms, water, thyme, salt and pepper to frying pan; cook 5 minutes or until softened. Add whipping cream and jelly; bring to a boil. Reduce heat to medium low, simmer for 3-5 minutes or until thick enough to coat the back of spoon. Arrange pork on plate and spoon sauce over top.
