Feta Stuffed Chicken Breasts

  • 4 large boneless skinless chicken breasts
  • 3/4 cup crumbled feta cheese
  • 2 Tbsp chopped pitted oil cured black olives
  • 2 Tbsp finely chopped roasted red pepper
  • 1 green onion, finely chopped
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp dried oregano
  • ¼ tsp pepper
  • 1 egg
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • ¼ tsp salt

Step 1

Cut chicken breasts in half lengthwise but not all the way through and open like a book. Pound slightly and set aside. In bowl, toss together cheese, olives, red pepper, green onion and parsley, 2 tsp of the oregano and the pepper. Stir in egg until combined. Divide mixture among the centre of each chicken breast. Roll up chicken breasts and secure with toothpick. In bowl, whisk together oil, lemon juice, salt and remaining oregano. Add chicken breasts and turn gently to coat. Let stand for 10 minutes. Place on greased grill/pan on medium high heat for about 15 minutes, turning occasionally. Let stand 5 minutes before serving.
