Choose a healthy-looking carrot to use for this project.
Cut off the top of the carrot about 1 inch from the stalk with a sharp knife. If there are any leaves on the carrot, cut them off close to the base.
Place the cut end of the carrot with the cut edge down onto a saucer, or on the bottom piece of a small clay pot. Add enough water to cover about half of the carrot piece.
Cover the saucer with a clear glass cup or clear plastic cup, which holds in the moisture. Place the saucer in a window that gets a good amount of light per day.
Remove the glass or plastic cup when you notice that the leaves on the carrot are beginning to grow.
Watch as your carrot develops. Observe the root growth, the stalk growth and the leaf growth every day for about six days.
