Red Onion Marmalade

Serve on steak, pork, grilled chicken, burgers, brie, grilled cheese, tofu, steamed veggies, whatever!

Ingredients

  • 2 T olive oil
  • 1 1/2 pounds red onion, sliced thin
  • 1/4 C sugar (more or less to taste)
  • 1 1/2 t kosher salt
  • 1/2 C ruby port
  • 1/2 C red wine vinegar
  • 1 1/2 t fresh thyme, chopped

Preparation

Step 1

Heat oil over medium high heat. Add onions and cook for 7 minutes. Add sugar and salt and cook 7 minutes more. Add port and vinegar and bring to boil. Reduce heat to medium low and simmer for 30 minutes or until thick. Stir in thyme. Keeps for 1 week stored in refrigerator. Serve on burgers, brie, grilled cheese, tofu, steamed veggies, whatever!
