Ingredients
- 3 ripe bananas
- 1/3 cup unsalted butter
- 3/4 cup agave nectar
- 1 tsp banana extract
- 1 cup dried apricots
- 1 tsp orange zest
- 1/2 cup blanched almonds
- 1/4 cup flax seeds
- 2 large eggs
- 1 3/4 cups gluten free baking mix
- 1 tsp xanthan gum
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon

Preparation
Step 1
1) in a food processor combine bananas, butter, and agave; process for 1 min until smooth
2) add the extract, apricots, zest, almonds, and flax seeds to the food processor; until smooth
3) while processing, and the eggs (1 at a time) through the feed tube and process until smooth
4) remove blade from the food processor then add remaining ingredients; stir to incorporate but do not over mix
5) apply non-stick spray to pressure cooker
6) pour the batter into the pressure cooker; secure lid
7) set pressure cooker to rice and timer for 20 min
8) when cooking is complete, invert onto a serving platter and serve hot or cold
