CHOCOLATE ECLAIR CAKE

  • whole graham crackers
  • 2 small boxes instant French vanilla pudding
  • 3 C milk
  • 8 oz Cool Whip
  • 1/3 C cocoa
  • 1/4 C milk
  • 1 C sugar
  • 1/8 t salt
  • 1/4 C butter
  • 1 t vanilla

Preparation

Step 1

Line buttered 9"x13" pan with whole graham crackers. Mix pudding with 3 C milk. Mix in 8 oz Cool Whip. Pour over crackers to cover, add another layer of crackers and pudding, crackers and pudding, etc. End with top layer of crackers. For topping boil cocoa, 1/4 C milk, sugar and salt. Add in butter and vanilla. Cool, then spread on cake and refrigerate. Will cut better if made a day ahead.
