Slow-Style Coconut Pudding Cake

Ingredients

  • •1 (18 ounce) 2-layer white cake mix
  • •1 (3 1/2 ounce) package vanilla instant pudding mix
  • •3/4 cup vegetable oil
  • •2 cups sour cream
  • •4 eggs
  • •1 egg white
  • •1 cup water
  • •1 teaspoon vanilla extract
  • •1/2 cup sweetened coconut
  • •1/2 cup chopped walnuts, divided
  • •Whipped cream, optional

Preparation

Step 1

Spray slow cooker with cooking spray. Combine all ingredients (except 1/4 cup of the walnuts and the optional whipped cream) in a large mixing bowl. Mix with electric mixer on medium speed for 2 minutes. Pour mixture into slow cooker and cook on low heat for 4 hours. Remove cover and sprinkle top of cake with the remaining nuts. Continue to cook for an additional 20 to 30 minutes or until cake is set. Dish pudding cake out of slow cooker and into individual serving bowls. Spoon whipped cream on top of each piece, if desired.
