Caesar Salad Pita/ CAESAR DRESSING

Ingredients

  • 3 tbsp. olive oil
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. Dijon mustard
  • 1 tbsp. soy sauce
  • 3 cloves garlic, minced
  • 4 boneless skinless chicken breasts
  • 4 large pita rounds, halves
  • Chopped romaine lettuce
  • Caesar Dressing
  • Grated Parmesan cheese

Preparation

Step 1

1. In a heavy duty zip top resealable bag, combine oil, lemon juice, mustard, soy sauce, and garlic; add chicken breasts. Seal bag, and refrigerate 2 hours.
2. Preheat oven to 350. Line a rimmed baking sheet with heavy duty aluminum foil. Remove chicken from marinade, discarding marinade. Place chicken on prepared baking sheet. Bake 25-30 minutes, or until done. Thinly slice hicken; set aside.
3. Stuff pita halves with romaine lettuce. Top evenly with chicken, Caesar dressing. and grated Parmesan. Serve immediately.

CAESAR DRESSING;
2/3 cup mayonaise
3 tbsp. fresh lemon juice
1 tbsp. Worcestershire sauce
1 tbsp. Dijon mustard
1 tsp. anchovy paste
2 cloves garlic, minced
1/4 tsp. ground black pepper

In a medium bowl, whisk together mayonnaise, lemon juice, Worcestershire sauce, mustard, anchovy paste, garlic, and pepper. Cover, and chill.
