Italian - Sauteed Cannellini Beans & Cherry Tomatoes

Ingredients

  • 1 can cannellini beans
  • olive oil
  • 1 sprig rosemary, chopped
  • cherry tomatoes
  • lemon zest
  • basil
  • fresh mozzarella balls

Preparation

Step 1

Heat skillet with olive oil. Drain cannellini beans and saute in pan. Add chopped rosemary. Saute until brown.

Drizzle olive oil over cherry tomatoes in a separate baking pan. Roast tomatoes for 5 minutes.

On a serving tray, place the beans on one end of the tray. Add the roasted tomatoes over the beans. Zest the lemon and add on top of the beans.

Chiffonade the basil and sprinkle over the beans. Add small bites of mozzarella on one end of the tray.
