Thai Shrimp and Noodles

Ingredients
- 2 lb fresh or frozen shrimp in shells
- 8 oz dried spaghetti, broken
- 5 cups broccoli florets (about 1-1/2 lb)
- 1/3 cup creamy peanut butter
- 1/4 cup soy sauce
- 3 Tbsp. rice vinear
- 2 Tbsp toasted sesame oil
- 1 Tbsp chile oil
- 1 Tbsp grated fresh ginger
- 3 cloves garlic, minced
- 4 green onions, chopped

Step 1
1. Thaw, peel, and devein shrimp, leaving tails intact, if desired. Rinse the shrimp and pat dry with paper towels.
2. In a dutch oven or kettle bring a large amount of water to boiling. Add spaghetti; cook for 4 minutes. Add broccoli; cook for 2 minutes. Add shrimp; cook for 2-3 minutes or until shrimp turns opaque and spaghetti is done.
3. Meanwhile, in a bowl stir together peanut butter and soy sauce. Stir in vinegar, seasme oil, chile oil, ginger, and garlic. Drain spaghetti mixture; return to dutch oven. Add peanut butter mixture and green onions. Toss gently to coat.
(chile oil=1 TBSP cookin oil plus a dash of hot pepper sauce)
