Ingredients
- 600 grams milk
- 150 grams eggs
- 150 grams sugar
- 75 grams cornstarch
- 150 grams milk
- 10 grams vanilla
- 50 grams butter
- 250 grams whipping cream, whipped
Preparation
Step 1
Bring the first part of the milk to a boil. Whip the eggs together, in a separate bowl, combine the sugar and cornstarch. Add the eggs to the sugar mix, then add the 2nd amount of the milk to the dry ingredient mix until a smooth paste is formed. Add a small amount of hot milk to the mix, whisk until blended.
Pour the egg mix into the hot milk, stirring until the cream boils and thickens. Remove the mixture from heat, and then add vanilla and butter and mix. Let cool. Mix cooled pastry cream until smooth and then add the whipped cream, just until incorporated.
