Butternut Chicken Stew

Ingredients

  • 2 lbs chicken, diced
  • 1 bunch asparagus, chopped
  • 2 cloves garlic, minced
  • 1 head of kale, removed from stems and chopped
  • 2 cups cubed butternut squash
  • 1/2 yellow onion, chopped
  • 7.5 oz can diced tomatoes
  • 1 T. autumn spice (find it a your local spice shop)
  • 1 t. All Spice
  • 1 bay leaf (remember to remove before eating)
  • 2 t. oregano
  • 2 pinches sea salt
  • 1 pinch pepper
  • 1 T. kuzu root (or other thickening agent) dissolved 2 T. cold water

Preparation

Step 1

Place all ingredients in a crock pot and cook on low for 4-5 hours. Add thickening agent toward the end and stir.
