Cookies - Chocolate Macaroons

Ingredients

  • 1 - 4oz. pkg. sweet baking chocolate
  • 2 egg whites
  • 1/2 c. sugar
  • 1/4 tsp. vanilla
  • 1 - 7oz. can flaked coconut = 2 2/3 c.d

Preparation

Step 1

Place chocolate in top of a double boiler. Bring water (underneath) to a boil. Reduce heat to low and cook chocolate until it melts, stirring constantly. Remove from heat & cool.
Beat egg whites (at room temperature) at high epeed for 1 minute. Gradually add sugar, 1 Tbsp. at a time, beating until stiff peaks form & sugar disolves. Add chocolate & vanilla. Beat well. Stir in coconut. Drop by tsp. onto cookie sheets lined with brown paper.
Bake at 350 degrees 12-15 minutes. Transfer cookies leaving on brown paper, to cool racks. Cool
