Ingredients
- 1 plum tomato
- 1 cup diced peeled mango
- 1 diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup fine chopped cilantro
- 3 tbs fresh lime juice
- 1 tbs minced seeded jalapeño
- 1/8 tsp salt
- Dash of black pepper
- 8 7 inch flour totillas
- 3 cups shredded cooked chicken breasts (about 1 1/4 lb)
- 1/2 tsp salt
- 1/2 tsp cup low fat sr cream
- 2 cups thinly sliced red cabagge
- Combine first 9 ingredients in a bowl let stand at room temperature for 30 minutes
- Warm tortillas according to package directions
- Combine chicken and 1/2 tsp salt spread 1 tbsp sr cream over each tortilla divide chicken evenly among tortillas top each tortillas top each with 1/4 cup mango mixture and serve seam side down
