Ingredients

  • 1 plum tomato

  • 1 cup diced peeled mango

  • 1 diced red bell pepper

  • ¼ cup diced red onion

  • ¼ cup fine chopped cilantro

  • 3 tbs fresh lime juice

  • 1 tbs minced seeded jalapeño

  • ⅛ tsp salt

  • Dash of black pepper

  • 8 7 inch flour totillas

  • 3 cups shredded cooked chicken breasts (about 1¼ lb)

  • ½ tsp salt

  • ½ tsp cup low fat sr cream

  • 2 cups thinly sliced red cabagge

  • Combine first 9 ingredients in a bowl let stand at room temperature for 30 minutes

  • Warm tortillas according to package directions

  • Combine chicken and ½ tsp salt spread 1 tbsp sr cream over each tortilla divide chicken evenly among tortillas top each tortillas top each with ¼ cup mango mixture and serve seam side down
