Sweet Potato Casserole

  • TOPPING:
  • 1 (29 oz) can sweet potatoes, drained
  • 1/2 cup evaporated milk
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 1/4 cup (1/2 stick) butter, melted
  • 1 tea. vanilla
  • 1 cup packed brown sugar
  • 1/3 cup butter, melted
  • 1/2 cup flour
  • 1 cup chopped pecans

Preparation

Step 1

Preheat oven to 350 degrees.

Place sweet potatoes in mixing bowl and mash slightly with fork. Add evaporated milk, sugar, eggs, butter and vanilla and mix well.

Pour into greased 7x11 baking dish.

Mix topping ingredients and sprinkle over casserole.

Bake uncovered for 35 minutes or until crusty on top.
