SCALLOPED POTATOES

  • 2 quarts diced potatoes (partially cooked)
  • 1/4 C pimento
  • 1/4 C green pepper
  • 1/4 C onion
  • 1/4 C butter
  • 1 lb cheese
  • 2 C milk
  • 1/2 t salt

Preparation

Step 1

Fry pimento, green pepper and onion in butter for 15 minutes. Melt cheese in milk to which salt has been added. Mix together and pour over potatoes in greased casserole. Top with butter and crushed potato chips. Bake 1 hour at 350 degrees.
