Ingredients
- 1 1/2 c cooked brown rice
- 1 can (11oz) whole kernel corn, drained or 1 1/2 c corn cut from the cob
- 1 c almonds, toasted, chopped
- 1 c fresh peas or frozen peas, thawed
- 1 peach, peeled, coarsely chopped
- 1/2 c Catalina dressing
- 1/4 c chopped red onion
- 1/4 c chopped cilantro or fresh parsley

Mix all ingredients in a large bowl. Refrigerate until ready to serve.
