Cheesy Chicken Enchiladas

Ingredients

  • 20-25 Corn Tortillas
  • 1 large can red or green enchilada sauce
  • 1 can diced green chilies
  • 1-2 bags mexican style shredded cheese
  • 1-2 packets taco seasoning

Preparation

Step 1

Boil or Rotisserie whole chicken

Pick chicken add 1 can chicken broth and simmer over stove with taco seasoning.

Heat Corn Tortillas in Microwave around 6 a time. Fill with chicken mixture and cheese, roll.

Cover bottom of baking dish with enchilada sauce, fill baking dish with rolled tortillas. Smother with remaining enchilada sauce, cheese, green chilies and jalapenos to taste.
