Chicken Pasta Bake

This cheesy all-in-one chicken casserole dish literally shouts “comfort!” It makes use of ingredients you can easily keep on hand so you can always be ready to throw together this hearty meal.

Ingredients

  • 1 lb penne pasta
  • 2 lbs ricotta cheese
  • 3/4 cup grated Parmesan cheese
  • 1 (12oz) can fat-free evaporated milk
  • 1 egg
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 (10oz) pkg frozen chopped broccoli, thawed and well drained
  • 1 (10oz) pkg or 2 cups cooked chunked chicken breast
  • 2 cups shredded mozzarella cheese

Preparation

Step 1

Preheat oven to 350*. Prepare penne pasta according to package directions; drain. Coat a 9" x 13" baking dish with cooking spray.

Meanwhile, in a large bowl, combine ricotta cheese, Parmesan cheese, evaporated milk, egg, garlic powder, salt, and pepper; mix until well combined.

Stir in broccoli and cooked chicken; mix well. Add penne and toss gently until well mixed; pour into baking dish and sprinkle with mozzarella cheese.

Cover with foil and bake 45 minutes then remove foil and bake 5 more minutes.
