Marinated Beef Strips With Tomatoes

Ingredients

  • 1/3 cup soy sauce
  • 1/3 cup sherry
  • 1 teaspoon sugar
  • 1 pound sirloin steak, cut into 1/2-inch strips
  • 1 tablespoon cornstarch
  • 1 medium onion, sliced
  • 1/4 pound mushrooms, sliced
  • 1 medium green pepper, sliced
  • 2 medium tomatoes, cut into 1-inch chunks

Preparation

Step 1

In bowl, combine soy sauce, sherry, sugar and beef.

Cover and marinate in refrigerator at least 2 hours; stir occasionally.

Drain marinade from beef into 12x8-inch dish; add cornstarch, onion, mushrooms and green pepper.

Cover with plastic wrap. Microwave at *high* 4 to 5 minutes, or until sauce is thickened; stir once. Stir in beef.

Cover, microwave at *high* 4 minutes; stir once. Add tomatoes; microwave at *high* 2 minutes. Serve over rice or noodles, if desired.
