MEXICAN CHICKEN KIEV

Ingredients

  • 4 whole chicken breasts, halved, boned and skinned
  • 3 Tbs. butter
  • 3 Tbs. sharp cheese spread
  • 3 Tbs. diced onion
  • 1 1/2 tsp. salt
  • 1 tsp. MSG
  • 2 Tbs. chopped green chilies
  • 1/4 c. cheddar cheese crackers, crushed
  • 1 1/2 Tbs. taco seasoning mix

Preparation

Step 1

Flatten each piece of raw chicken with a mallet.
Beat together butter and cheese spread. Add onion, salt, MSG and chilies; mix well.
Place 1 Tbs. spread in one end of each piece of chicken. Roll up each piece, tucking the ends in to totally cover the filling. Use tooth picks to fasten the ends.
Combine crackers and taco seasoning mix.
Dip each rolled piece in melted butter and roll in the cheese cracker and taco seasoning mix.
Place roll pieces in 12 x 8 x 2” pan. Bake in a 350° oven for 44 – 48 minutes or until chicken is tender.
