Apple Tartlets

Ingredients

  • 1 1/2 cups flour
  • 1 tbs. sugar
  • Pinch salt
  • 3/4 cup butter, cold and cut into pieces
  • 1/4 cup ice water
  • 4 apples, peeled, cored, cut into pieces
  • 1/4 cup sugar
  • 1/4 cup butter, cold, cut into pieces
  • 1/2 cup apricot jam
  • 1 tbs. Cognac

Preparation

Step 1

Combine the flour, sugar, and salt. Cut in the butter. Sprinkle the mix with ice water and gather into a ball. Divide dough in half and roll into 1/8 inch thickness. Cut out 6 inch circles and place on a baking sheet. Chill.

Arrange the apples in a concentric pattern on the circles. Sprinkle with sugar and dot with butter, chill. Bake at 400 degrees for 20 -30 minutes. Heat jam with Cognac and strain. Brush jam mixture onto warm tartlets.
