Ingredients
- Cheddar Cheese Sauce:
- 1/4 cup all-purpose flour
- 2 cups 1% low-fat milk
- 1 1/4 cups (5 oz) shredded sharp cheddar cheese
- Swiss Cheese Sauce:
- Substitute 1 cup (4 oz) shredded swiss cheese for cheddar
- Gruyere Cheese Sauce:
- Substitute 3/4 cup (3 oz) shredded Gruyere and 1/3 cup (about 1 1/2 oz) finely grated Parmesan for cheddar
- Asiago Cheese Sauce:
- Substitute 1 cup (4 oz) grated Asiago for cheddar
- Smoked Gouda Cheese Sauce:
- Substitute 3/4 cup (3 oz) shredded smoked Gouda for cheddar

Preparation
Step 1
Lightly spoon flour into dry measuring cup;
Level w/knife;
Place flour in medium heavy saucepan;
Gradually add milk, stirring with whisk until blended;
Place over medium heat;
Cook until thick (about 8 minutes), stirring constantly;
Remove from heat; add cheese, stirring until melted
