  • 1/4 cup all-purpose flour
  • 2 cups 1% low-fat milk
  • 1 1/4 cups (5 oz) shredded sharp cheddar cheese
  • Swiss Cheese Sauce:
  • Substitute 1 cup (4 oz) shredded swiss cheese for cheddar
  • Gruyere Cheese Sauce:
  • Substitute 3/4 cup (3 oz) shredded Gruyere and 1/3 cup (about 1 1/2 oz) finely grated Parmesan for cheddar
  • Asiago Cheese Sauce:
  • Substitute 1 cup (4 oz) grated Asiago for cheddar
  • Smoked Gouda Cheese Sauce:
  • Substitute 3/4 cup (3 oz) shredded smoked Gouda for cheddar

Preparation

Step 1

Lightly spoon flour into dry measuring cup;
Level w/knife;
Place flour in medium heavy saucepan;
Gradually add milk, stirring with whisk until blended;
Place over medium heat;
Cook until thick (about 8 minutes), stirring constantly;
Remove from heat; add cheese, stirring until melted
