Ingredients
- 3 large potatoes, peeled and cut into 1" cubes
- 1 medium onion, chopped
- 1 tbsp. minced chives
- 1/2 tsp. seasoned salt
- 1/4 tsp. pepper
- 2 tbsp. butter
- 1/2 cup crumbled cooked bacon
- 1/2 cup shredded part-skim mozzarella cheese
- 1/2 cup shredded cheddar cheese
Preparation
Step 1
Combine the first 5 ingredients in a bowl. Transfer to greased heavy-duty foil, folded so it is double thickness. Drop in chunks of butter.
Fold foil and seal tightly. Grill, covered, over medium heat on both sides until until the potatoes are tender - about 15 - 18 minutes per side.
Open foil. Sprinkle the bacon and cheeses over potatoes. Grill until cheese is melted. Open foil carefully to allow steam to escape.
