Minestrone Soup

Found this fresh and delicious recipe in The Okinawa Program. I love this soup when I'm feeling under the weather.

Ingredients

  • 1 1/2 cups diced carrots
  • 1/2 cup finely chopped onion
  • 5 cups chicken broth
  • 1 cup potatoes
  • 1 1/2 cups sliced green beans
  • 1 cup diced zucchini
  • 1 28oz can diced tomatoes
  • 2 cups macaroni
  • salt and pepper to taste

Preparation

Step 1

Sauté carrots and onion in a large stockpot for 4 minutes.
Add next six ingredients and bring to a boil.
Reduce heat and simmer for 25 minutes.
Add pasta, salt, and pepper.
Cook for 5 minutes or until pasta is tender.
