Chicken Breasts with Artichoke Hearts

Ingredients

  • Chicken Breasts, boned and skinned
  • Salt, pepper
  • 6 Tblsp butter or margarine
  • 1 Tblsp arrowroot or 2 Tblsp flour
  • 3/4 cup chicken broth
  • 1/2 cup white or rose wine
  • 1/4 cup sliced green onions, including tops
  • 1/2 cup sliced fresh mushrooms
  • 1 9-oz package frozen artichoke hearts, cooked according to directions and drained

Preparation

Step 1

Preheat oven to 350 degree (note you will lower temp later)

Season chicken with salt and pepper, then brown chicken in 1/2 of butter and put in 350 degree oven for 45 minutes to one hour. Melt rest of butter, stir in arrowroot, wine and broth.

Stir constantly until sauce is thickened and smooth.

Remove chicken from oven, turn over. Sprinkle with onions and mushrooms,

Add artichoke hearts Pour sauce over and return to oven for 30 minutes at 325 degrees.
