Cinnamon Spiced Banana Nut Bread

  • 1 cup all-purpose flour
  • 1 cup whole-wheat pastry flour
  • 1 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 4 egg whites
  • 1/2 cup buttermilk
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup chopped walnuts

Preparation

Step 1

1. Preheat the oven to 350 degrees, spray a 9" x 5" x 3" loaf pan with non-stick spray and set aside.

2. In a large bowl, stir together the all-purpose flour, whole wheat flour, brown sugar, baking powder, cinnamon and baking soda. Make a well in the center of the mixture.

3. In another large bowl, beat the egg whites until foamy. Stir in the buttermilk, applesauce and vanilla. Then stir in the bananas until well combined.

4. Add the banana mixture to the flour mixture and stir until just moistened. Fold in the walnuts.

5. Pour the batter into the prepared pan. Bake for 45-55 minutes. Cool bread in the pan for 10 minutes, then remove to a wire rack to cool completely before slicing.
