FRUIT CAKE

Aunt Leah (Hartzell) Moore was known for her fruit cakes. She always frosted them with a carmel frosting and used some simple decoration on the top. Although our family didn't care much for the fruit in fruit cake, we did enjoy making this recipe, omitting all the fruit except for the raisins.

Ingredients

  • 1/2 c. nuts
  • 2 c. water
  • Pinch of salt
  • 4 c. flour (scant cups)
  • 1 tsp. baking powder
  • 2 c. sugar
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 2 c. raisins
  • 1/2 c. shortening
  • 2 tsp. cinnamon

Preparation

Step 1

Preheat oven to 325° F.
In a large pan, boil together all the ingredients except the flour and baking powder for one minute. Cool and add the flour to which the baking powder has been added.
For cupcakes, bake 30-35 minutes; for a cake, bake 40-45 minutes.
